Blender Muffins

Ingredients

2 cups Oats

2 Eggs

1 cup Plain Greek Yogurt

2 Bananas

1 1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

1/4 cup Chia Seeds

1/2 cup of your choice of sweetener (maple syrup, honey, brown sugar, coconut sugar)

Toppings– Coconut, Fruit, Chocolate chips, your choice

Instructions

  1. Put everything in a blender, and blend until smooth consistency, but not overly runny.
  2. Pour into oiled muffin tins. If you are using liners they will be need to be oiled as well or the muffins will stick.
  3. Sprinkle with toppings and bake at 400°F for 20 minutes.
