Slow Cooker Gingerbread Oatmeal

Christmas morning is crazy busy, and we all tend to skip breakfast in anticipation for the big afternoon feast. Instead of skipping breakfast, pop this in the crock-pot before Santa stops by and you’ll have a healthy quick meal to kick off the festivities.

Ingredients:

2 cups uncooked steal cut oats

1/2 tsp. salt

1 tbsp. cinnamon

1 tsp. ginger

1 tsp. nutmeg

1/2 tsp. cloves

1/2 tsp. allspice

8 cups water

1/4 cup molasses (can sub with maple syrup)

Optional toppings: nuts, seeds, dried cranberries, Greek yogurt.

Instructions:

  1. Spray the inside of a 6-quart slow cooker with cooking spray.
  2. Combine all ingredients in slow cookers and stir well. Cover and cook on high for 3-4 hours or on low for 8 hours, stirring occasionally.
